Behind the Scholerhof, which is not so common in the distillery industry, is a woman: Iris Krader, state-certified distiller.
Raised on the Scholerhof and agile in the third generation. There, Iris Krader not only grows fruit for distillation on her own orchards, but also her own wine, Pinot Noir. Your distillates and your wines are very popular in gourmet gastronomy.
How did the lady come up with the gin?
Well, when you were young, relatives from nearby Switzerland kept coming to visit and that aunt always brought her gin with her. This extraordinary, fragrant sensory impression is anchored in your memory. As is the desire to have your own gin. After investing in a fine distillate still, it is now possible for you to bundle and capture all Black Forest aromas in your IRIS Dry Gin.
After careful, meticulous preparation, the first distillation run was already successful in 2013 and Iris Krader immediately won the gold medal at the Destillata 2014 with the IRIS Dry Gin.
The high-performance water bath still with a capacity of 150 l is suitably covered with stainless steel, but the base material is thick-walled copper, which achieves the best efficiency. For the firing, which is equipped with evenly arranged steep and transverse boilers and thus ensures a constant heat output, Iris Krader consciously decided to use wood firing, which is difficult and labour-intensive, but the crackling of wood must not be missing during distillation.
The more than 20 botanicals (including: juniper, lavender, blackberry leaves, wild sloe, mint, cardamom and cranberries) for the gin come directly from our own orchard or from the region. After distillation, the high-proof gin is married to the Black Forest spring water and distilled to 47% vol. Alcohol lowered. Bottled by hand in small batches. Pure nature, more Black Forest is not possible.
