Nuestra Soledad is made from 100% espadin agave from “La Compania” Ejutla, roasted in pit ovens with mesquite and oak, fermeted in open-air tanks, and double-distilled in copper alembics stills.
About the distillery:
La Compania is a small town in the district of Ejutla, located in the south of the Valles Centrales region. The palenque is well off the valley floor and decidedly upslope of the mountain, at an elevation of around 5,000 feet. Given the slopeside location of the agaves. The drainage is very sharp. Several natural drainages run off the slopes and feed the dense growth of agave.
