When the first Absinthe Duplais was developed in summer 2005, both I and Oliver Matter weren’t aware what we are about to initiate.
The formula was taken from the famous book „Traité des liqueurs et de la distillation des alcools“ dating back to 1867.
David Tibet allowed us to use his image „Dream of the green goddess“ for the label.
The first award was given by the oldest Spirits competition IWSC. Gold, Best in Class made a lot of connoisseures and distillers curious and had a very positive effect on the still young spirits category of Absinthe.
2006 we released Absinthe Duplais Blanche as the brother of Absinthe Duplais Verte.
There was a special limited edition made with wine base alcohol instead of grain base alcohol. A special label was done for an exhibition in Berlin, where the famous collection of impressionist art collection oft he Metropolitan Museum of Art, New York was on shown.
2019 comes another special release – something very special: About 3 years ago, a batch of Absinthe Duplais Verte was put into a barrel that was used to age Vieille Prune before. Obviously the staves of this oak barrel were planed and the whole barrel set together again. The barrel sat exactly 3 years in the distillerys basement – enough time to create a truely unique Absinthe. The first tasting was really exciting and showed all the effort was worth it! All aromas grew into each other and created a very harmonic overall impression. The nice green color is just as bright as it initially has been. The louche is thick and light green. Even when adding a bit more water, it doesn’t get thin. The nose is fresh and herbal. Taste is very compact and thick. Anis and grand wormwood are in the foreground, followed by fennel and coriander. It stays very long and all herbal aromas are very well balanced and harmonic. Just as one would expect it from a vintage Absinthe.
This edition, limited to only 418 bottles, also comes with a painting of David Tibet from the collection of Markus Lion.
