Vermouth di Torino Bianco from Antica Torino in Italy
Welcome to the world of Vermouth di Torino Bianco, one of Italy's most outstanding aperitifs, whose origins date back to the 40s and 50s. This historic recipe was once cultivated by Paola's great-uncle Carlin, a passionate wine and vermouth maker from a picturesque village in the idyllic Monferrato region. He spent his days at FIAT in Turin, while in his free time he cultivated the family vineyards. Paola, herself a native of Piedmont, continues his legacy today as office manager of Antica Torino.
Made in Italy using traditional distilling techniques
The composition of this Vermouth di Torino Bianco is a veritable kaleidoscope of unique ingredients, including wormwood, marjoram, yarrow, sage, thistle, thyme, coriander, Florentine Iris and a generous portion of licorice. Originally, some components were macerated in boiling wine - a method that Honor tried to recreate, but they found that extractions in alcohol or alcohol-water mixtures brought out the flavors more intensely and consistently. A particular challenge was the dosage of the licorice root, which is ultimately macerated separately and added in different quantities to achieve the characteristic taste of the original recipe.
The Vermouth di Torino Bianco impresses with its floral, aromatic and spicy scents. On the palate it develops rich and spicy, with a distinctive flavor profile that sets it apart from others. Refreshing and digestive – a real treat for the palate. This authentic vermouth is made almost unchanged according to the traditional recipe, a piece of culinary history, comparable to the enjoyment of a timelessly beautiful, old song. Vittorio Zoppi and Filippo Antonelli are the driving forces behind Antica Torino Vermouth, a product deeply rooted in their personal stories and the rich tradition of Italian winemaking.
Vittorio Zoppi found his inspiration in the memories of his grandmother Iole, with whom he spent many summers. As a child, he secretly tasted her vermouth, a drink she particularly enjoyed. Those early experiences stayed with him until 2014, when a liquor store owner in San Francisco, California, asked him about vermouth. Vittorio then began an intensive phase of study and research, which led to the bottling of Antica Torino Vermouth two years later. Previously, Vittorio worked for twenty years building and managing distribution networks in North America for wine and liquor producers.
Filippo Antonelli, who joined the project a few months after Vittorio, brings with him his own deep connection to the history and culture of vermouth. As a child, he spent his late summers with his grandmother Elena in Colleretto Giacosa, in the Canavese area of Piedmont. There he developed a preference for vermouth, inspired by his evenings with the chef Giovanni. Filippo, whose mother comes from Canavese, is also strongly linked to Piedmont through his great-grandfather Giuseppe Giacosa, Puccini's librettist. He manages wine production in the family businesses Antonelli San Marco in Umbria and Castello di Torre in Pietra near Rome and exports these world-famous quality wines internationally.
Together, Vittorio Zoppi and Filippo Antonelli combine their deep knowledge and passion for wine to create Antica Torino Vermouth - a drink that carries the essence of their family heritage and the excellence of Italian viticulture.
