The Weichsel — the sour or Morello cherry — is more tart and more savoury than the sweet cherry. That is exactly what makes it such an interesting brandy: fruity but never tame, with a fine bitterness and the typical note of the cherry kernel.
The fruit
Where the sweet cherry stays round and mild, the sour cherry brings definition: dark, tart fruit and a lively acidity. Georg Hiebl distils it single-variety and keeps both.
Aroma & taste
Dark sour cherry on the nose, tart and fresh, with the almond-like tone of the kernel. Juicy and savoury on the palate, the acidity giving structure, the finish long and finely bitter.
How to enjoy it
Neat at around 16–18 °C in a brandy glass. A characterful digestif for anyone who likes fruit without sweetness.

Single-variety by conviction
The range holds over 100 different fruit brandies and liqueurs. Hiebl specialises in single-variety distillation — especially of apples and pears — so each variety keeps its own character instead of disappearing into a blend.
Craft Distillery of the Year 2026
At Craft Spirits Berlin 2026, Europe's most important competition for craft spirits, Hiebl prevailed against 120 distilleries from 17 nations to take the overall title: Craft Distillery of the Year 2026. From 47 entries came four "Best in Class" golds, plus 19 further gold, 20 silver and 8 bronze medals — on top of several earlier "Distiller of the Year" honours.
