French Absinthe: A Historical Journey Through the Heart of the Green Fairy

1805: The Birth of a Giant

The history of French absinthe begins in 1805, when Henri-Louis Pernod founded his distillery in Pontarlier and thus laid the foundation for one of the largest spirits companies. Originally in Couvet, Switzerland, Major Dubied, his son Marcelin and Henri-Louis Pernod produced 16 liters of absinthe every day since 1797, much of it for the French market.

1830: Absinthe goes to war

A turning point was in 1830, when France was fighting in Algeria and Pernod sold absinthe to the military to purify drinking water. This step established absinthe as one of the most popular spirits in Europe.

1870 - 1905: The boom in absinthe distilleries

By 1870, the number of absinthe distilleries in Pontarlier grew to between 6 and 10. Around 1905, at the height of the absinthe boom, there were 25 distilleries in this region alone. This upswing was also reflected in production: What once started with 16 liters per day quickly reached daily production figures of up to 20,000 liters.

1878: Expansion and innovation

Demand demand for absinthe led to the company's founder's grandchildren, Louis-Alfred and Fritz Pernod, building a new production facility near the Doubs River in 1878 to accommodate its growing popularity.

The 19th century. Century: Absinthe conquers France

Across France, from Paris to Marseille, Lyon and Dijon, as well as abroad, absinthe became the national drink. Exports to countries such as Belgium, Argentina and Spain attest to the drink's international popularity.

The early 1900s: ban and rebirth

The early 20th century saw the ban on absinthe in France , a direct result of excessive consumption and lobbying by the wine industry. But the fascination for absinthe lives on to this day, and at absinthe.de we celebrate the rich history and diversity of French absinthe.
