Behind the name Gaudentia Persoz is the first female distiller in Switzerland. It belongs to the Persoz Distillery family. It is based in Couvet in the Val-de-Travers, where the origins of absinthe can also be found.
The Persoz distillery produces its absinthes according to the original tradition and distills them in old, hidden stills.
