Green absinthe at 65%. Distilled directly on our farm with plants grown on our plots at 1,100 meters above sea level, this absinthe is an original recipe. This has the special feature of being distilled from fresh plants in July at harvest time. Large vermouth, hyssop and fresh lemon balm give this recipe a greener, more "chlorophyll" herbaceous character than a classic green vermouth. This absinthe is drunk with 4 or 5 degrees very cold water, with or without sugar, as an aperitif. Every year we develop a new summer absinthe recipe that is different from the previous one. Summer 2021 has a fruitier character.

The absinthe ritual: absinthe is a distilled aniseed aperitif, which is traditionally drunk diluted with water. After pouring a dose of absinthe on the bottom of the glass, gently pour 3 to 5 degree cold fresh water on it. You can also sweeten your absinthe, but we don't recommend that.
The Distillery: In a room at the back of our barn installed, our distilling workshop revives the tradition of the farmer's distillery. Our copper stills allow us to create authentic spirits from the popular know-how of the Jura mountains. Our plants are adapted to the size of our farm and allow us to distill noble raw materials to offer you products of the highest quality.
Absinthe: At an altitude of 1,100 meters in the historic absinthe area on the Swiss border, above Pontarlier, our artisan distillery offers a range of absinthes made according to ancient recipes. Large wormwood, hyssop, lemon balm, small wormwood and many other plants that go into the composition of our absinthe are grown with the greatest care on our farm and dried in bunches in our barn. It is the harvests of these plants that determine the production levels each year. We therefore invite you to discover our range of absinthes so that everyone can find the authentic taste that suits them.

When Francois and Mayra Aymonier fulfilled their dream of Buying and running a farm fell to the French jury The idea of distilling absinthe is still a long way off. As they found that a wide variety of herbs do extremely well on their farm flourish, one thing led to another. Of course it wasn't easy to fulfill all the customs formalities, but finally one thing worked out day off. Absinthe from our own production. Only the anise is made from the relate to the Mediterranean region, everything else is planted, cared for, harvested, dried and crushed for distillation.
When you meet the young married couple, you feel the authentic Spirit and the love that is put into all products. Then you come in the combustion chamber in the low basement of the courtyard, you can see a tiny one copper kiln. Thoughts wander to a time when only Switzerland, just a few kilometers away, is lively in this ambience burned black - but that was a long time ago!
In addition to the various types of absinthe, Francois also produces a a few regional liqueurs and an aniseed which we will soon have will offer.
