Great absinthe can't be rushed. The Abisinthe Lemercier 45% understands this – which is why it rests for a minimum of nine months in large glass vessels, stored high up in the warehouse, slowly coming into its own. Only once the botanicals have fully harmonised does this absinthe find its way to you.
What you get is a carefully composed blend of herbs and seeds rooted in authentic absinthe tradition: wormwood and mugwort lay the characteristic, gently bitter foundation, while fennel and green anise bring a soft, herbal sweetness to the mix. Star anise rounds everything out with its distinctive, almost liquorice-like depth. The result is a layered, well-balanced absinthe that stays approachable at 45% vol. without ever losing its identity. Thujone content is well within legal limits at under 10 mg per litre.
And then there's the ritual. No other drink demands to be prepared quite like absinthe – and for good reason. Pour one measure into a tall glass, rest the absinthe spoon across the rim and place half or a whole sugar cube on top. Then slowly – drop by drop – let five measures of cold water fall over the sugar, watching it dissolve as the liquid gradually turns cloudy. This is the louche, the moment absinthe reveals itself. Only then do you take your first sip – and understand why absinthe has inspired a culture all of its own.
