A green absinthe true to the historical school: the color comes not from a dye pot, but from a post-distillation herbal infusion—fully in the tradition of the classic *vertes*. What looks green here is genuinely green in composition.
Distilled in the Marche region and limited to 150 numbered bottles (2026 vintage). Each bottle bears its own number—this is no random product, but a deliberately crafted small-batch release.
Origin & Craftsmanship
Ætheria is the brainchild of absinthe maker Pierluigi Coppola, produced at the C&E Italian Distillery in Camerino. The process involved over fifteen years of historical research and a full year of micro-distillations just to strike the perfect balance between wormwood, anise, and fennel.
Uncompromising on ingredients:
- Wormwood (*Artemisia absinthium*) from Les Fourgs—cultivated by the multi-award-winning Distillerie La Semilla Aymonier
- Green anise from Egypt, rich in essential oils
- Sweet fennel from Provence
- Mela Rosa dei Monti Sibillini—an heirloom apple variety and a signature symbol of the Marche region
Aroma & Taste
On the nose: powerfully herbal—wormwood and hyssop, accompanied by balsamic, spicy, and subtle citrus notes.
On the palate: Green anise harmonizes with soft fennel. The wormwood presents a distinct yet elegant character, underpinned by a rich, enduring structure.
Finish: long, balsamic, and complex, with a delicate fruity note of Sibillini apple.
The Louche
Add ice-cold water, and Ætheria reveals its substance: an intense, dense, and luminous louche—the hallmark of a high content of natural essential oils.
How to drink it
Using the classic French method:
- 1 part absinthe
- 3–5 parts ice-cold water
- Sugar to taste (optional)
Slowly pour the water over the spoon and watch the louche develop. At 68% ABV, there is great power in the bottle—dilute generously.
