Sugar cane juice does not naturally contain alcohol, so in most cases a special fermenting yeast is added to this mash, which metabolizes the sugar molecules. This creates two things: heat and alcohol. The yeasts have a special influence on the taste of the end product. For example, every whiskey distillery has a strain of yeast that is only available to that distillery.

With this rum, no yeast is added and it is left to the environment. Yeast spores are everywhere in the air, so it's only a matter of time before the open sugar cane juice starts to ferment on its own. The advantage of a completely natural fermentation process is the extremely harmonious end product. In this case, the rum is only relocated, but not barrel-aged. With 69% ABV it seems to be a strong candidate at first glance, but far from it. The 69% comes with little alcohol, but the taste is of course intensely spicy. Very impressive!
