Product information "Crème de Cassis Noire de Bourgogne"
Crème de Cassis originally comes from Burgundy in France. Blackcurrants have been processed in the small town of Cassis (near Dijon) since the 16th century.

Crème does not stand for cream here, but describes a sugar content of at least 250g/l. In comparison, it is stipulated that liqueur contains at least 100g/l. must contain.

The varieties "Noir de Bourgogne" and "Royal de Naples" are characterized by an incomparable aromatic quality.

Immediately after the harvest, the sour berries are processed fresh. The berries are first cooled down to around -25°C. This preserves the fine aromas of the berries. Later they are then sprayed with alcohol at around -5°C. The berries are now macerated in alcohol for 5 weeks. The subsequent addition of sugar achieves a balanced aroma of acidity and sweetness. At the end of the Creme de Cassis to about 20% vol. set.

Crème de Cassis is mainly used for cocktails like the Kir (with wine) or the Kir Royal (with champagne). Lovers drink pure creme de cassis over ice.

Trivia: The Cassis de Dijon principle
In 1979, a groundbreaking court judgment was passed at EU level. It states that products that are approved in one EU country are automatically approved in all others. In Germany, a minimum alcohol content for liqueurs of 25% vol. fixed. However, since Cassis de Dijon contained less, a legal dispute arose that lifted trade barriers in the EU.

Xavier Devoille was a wine merchant in Charton who delivered to the Rhone Valley with his team of horses. His son Paul took over the small business in 1905 and settled in an old foundry in Moines-Hauts. around the same time he bought the "Luzet" brand from Constante and Achille Luzet. The product catalog was expanded from pure fruit schnapps to include absinthe. The first product was called Riquette and was produced around 1912. One of Paul Devoille's two daughters married Raymond Gouttefroy. When Paul Devoille died in 1954, Raymond Gouttefroy took over the business. In 1956 he developed the Girardin brand and introduced new products. The business passed to his daughter and her husband Jaques Veillet in 1973, who sold the company to Rene de Miscault in 1985. Today, Devoille is one of the largest absinthe producers in France. Son Hugues de Miscault is in charge of production and father Rene de Miscault runs the Musee des eaux des vie in Lapoutroie near Colmar. The product range is constantly being expanded to include new products (Absinthe Libertine, La Charlotte, Verte and Blanche de Fougerolles).
