The locally grown Wormwood from around Pontarlier gives “Liqueur d’Absinthe de Ponarlier” an incomparably intense, and especially floral aroma. Already by the 19th century, it was common knowledge that the combination of Andalusian Anise Seed and Pontarlier Wormwood was extremely tasty. I have the impression that this product had been developed by accident, when someone at the Guy Distillery tasting room poured sugar syrup instead of water into his Absinthe. But so often these kinds of “accidents” lead toward a great new invention, this one that we can now all enjoy and at only 25% ABV, is best served ice cold.
